Whole Wheat Coffee Cake with Cinnamon Topping

While waiting on 2+ hours of uploading items for a site I’m working on I decided to give a recipe from my VitaMix cook book a whirl. I didn’t actually use the VitaMix for it because, as luck would have it, my pitcher was washing at the time so I just grabbed a couple of mixing bowls and had at it. This isn’t the exact recipe in the book, nor did I find any listed on their web site, but it’s what I did!

Crumb Topping
Cinnamon Topping

  • 1/4  Cup Brown Sugar
  • 2 TBSP Whole Wheat Flour
  • 1 TSP Cinnamon
  • 2 TBSP Softened Butter

Put them in a small bowl, smush ’em up until it’s a bunch of little balls without any noticeable dry spots.

Coffee Cake

  • 1 Cup Whole Wheat Flour *
  • 1 1/3 Cups All-Purpouse Flour
  • 1 TBSP Baking Powder
  • 1 TSP Salt
  • 1 Cup Brown Sugar
  • 1 Egg
  • 1 Cup Whole Milk
  • 1/2 Cup Softened Butter

Whole Wheat Coffee Cake with Cinnamon Crumb Topping

Stir together Flours, Baking Powder, Salt, Brown Sugar in large mixing bowl. Beat in Egg, Milk, Butter just until mixed- do not over mix. Batter will be rather thick, add up to 1/4 extra cups milk to complete mixing. Spread in to lightly-greased 9″ pan. Sprinkle on topping.

Bake 37-40  minutes in a preheated 350* oven, or until a knife inserted in middle comes out clean.

It’s not a super-sweet treat, the ‘cake’ itself is closer to a nice slice of wheat bread, if I make it again I would double the topping mixture and put half in the center, half on top, but I liked it anyway. If making it for kids I would double the topping as I said and probably drop the whole wheat flour to 1/2 cup and add another 2/3 cup white flour, and probably a little more sugar.

I was just going to post a photo, but that seemed kind of teasy ; )

*If you don’t have whole wheat flour on hand, double the all-purpose flour instead.
